Roasted Corn with Herb Butter
This corn recipe allows you to serve a crowd easily--especially if your grill is busy cooking other foods. The herb butter makes the corn extra special and gives it an amazing taste.
Total Time: 35 minutes
8 ears of corn, unshucked
1 stick (1/2 cup unsalted butter)
1/4-1/3 cup basil, cut in a chiffonade
3/4 t. kosher salt
Freshly ground pepper
1 clove of garlic, minced
Heat oven to 350 degrees F. Put corn in husks directly on oven rack. Roast for 30 minutes. Cool enough to husk corn. Meanwhile, mix together butter, salt, pepper, basil and garlic. Spread over husked corn.
