Authentic Italian Sub Sandwiches
Salami, prosciutto, provolone...ingredients to make any Italian sandwich lover salivate. We soak the red onions in cold water to tone down the pungency, so the sandwich can work for a romantic picnic as well as a family picnic.
Servings: 1 sandwich
(Oil and vingear sauce for 3-4 sandwiches)

1/4 cup olive oil
4 t. red wine vinegar
1 garlic clove chopped
1/2 t. oregano
sea salt and fresh cracked pepper
1 submarine sandwich roll
sliced banana peppers
2 slices prosciutto
3 slices genoa salami
3 slices provelone cheese
thinly sliced red onion
shredded lettuce (iceberg or romaine)
Combine olive oil, vinegar, garlic, oregano and salt and pepper in a small bowl.
Cut submarine sandwich roll in half lengthwise. Spread olive oil mixture generously on both sides on the sandwich roll with a pastry brush.
Place sliced red onions in a bowl of cold ice water for 10 minutes. Remove from water and pat dry.
Place banana peppers on the bottom of the sandwich. Layer proscuitto, salami, and cheese. Top with lettuce, tomatoes, red onions, and top of roll.
