Avocado, Mozzarella & Tomato Balsamic Salad

This salad is an enhancement of a traditional carprese salad.  Here the carprese gets an upgrade with additions of avocado, butter lettuce and a sweet balsamic glaze.

1 -2 heads of butter lettuce, washed and torn into large bite-sized pieces

8 oz. baby mozzarella balls

10 oz. grape or cherry tomatoes, rinsed

2 avocados, peeled and diced

1 cup balsamic vinegar

3 T. brown sugar

kosher salt and pepper

Make balsamic glaze by placing vinegar and sugar in a saucepan on medium heat.  Bring just to a boil and then reduce heat.  Simmer until it has reduced by half.  Remove from heat and put into a glass container to cool.  Refrigerate until ready to serve. (Pre-made balsamic reductions are available in your grocery store in the vinegar section).

Place lettuce in a bowl.  Add mozzarella, tomatoes, and avocados.  Drizzle with glaze.  Sprinkle with salt and pepper if desired.
