Homemade Candy Dots

These candy dots brighten any party display.  You can flavor or color them according to any theme.  One of our favorite combinations is mixing almond and coconut extracts.

Ingredients: 

6 T. meringue powder

3/4 cup water

2 lb. powdered sugar

4 gel food colorings

flavorings of your choice:  vanilla extract, raspberry extract, coconut extract, almond extract, lemon, extract, mint extract, etc.  

Directions:

Place meringue powder, water and powdered sugar in the bowl of a stand mixer.  Mix together until well combined, scraping the sides of the bowl as necessary.  Whip the mixture until stiff peaks form, about 8-10 minutes.  The mixture should have the consistency of sour cream.  You want to be able to pipe it without it being too stiff.  Add drops of water if necessary.

Divide mixture into 4 bowls.  Add several drops of desired food coloring to each bowl.  Add    1/2 t. of desired extract flavoring to each bowl.

Put flavored and colored mixture into piping bags with small tip (or cut a small hole in the bag before piping).  Pipe small dots onto parchment paper and let sit overnight on counter to harden.
