Caramel
Popcorn
Kay was the "Candy Lady" in our neighborhood. Every year at Christmas, she would gift large bags of this delicious caramel popcorn to everyone.
Servings: 8-10
Total Time: 60 minutes, including baking time.
Ingredients:
2 bags of microwave popcorn, popped

1/2 cup butter
​
1/2 cup corn syrup
​
1 cup brown sugar
​
1/2 t. salt
​
1/2 t. baking soda
​
1 t. vanilla
​
Directions:
Heat oven to 250 degrees F. Cover a rimmed baking sheet with foil and spray with cooking spray. Pour popped popcorn on cookie sheet and place in oven to keep warm.

Heat butter, corn syrup, brown sugar and salt in a saucepan over medium heat. Stir constantly until the mixture boils.
​
Once the mixture begins to boil, stop stirring and allow it to boil for 5 minutes. Remove from heat and stir in baking soda and vanilla.
​
Pour over popcorn and stir to coat all the kernels. Bake in oven for 45 minutes, stirring 2-3 times during baking. Enjoy!
