Chicken Fajita Wraps

Chicken Fajita Lettuce Wraps

All of the taste with none of the guilt, these lettuce wraps will bring your guests back for seconds.

Ingredients: 

Directions:

Spice Mixture:

4 t. chili powder

2 t. cumin

2 t. kosher salt

2 t. paprika

2 t. garlic powder

2 t. onion powder

2-3 chicken breasts, sliced into thin slices

3 peppers (red, green, yellow or orange), cut into strips

1 onion, cut into strips

1 head lettuce (butter, iceberg, romaine, etc.)

Toppings:

sour cream

pico de Gallo

guacomole or sliced avocado

shredded cheese (recommended monterey jack)

Combine spices in a bowl.  

​

Heat frying pan over medium to medium high heat with olive oil.  Place sliced chicken in hot pan and sprinkle 2-3 T. spice mixture on top.  Cook until chicken is no longer pink, about 5-8 minutes, stirrring occasionally. 

 

Remove chicken from pan.  Add additional oil to coat bottom of pan.  Carefully add peppers and onions.  Add 1-2 T. spice mixture on top.  Saute, stirring occasionally, until peppers are crisp-tender, about 8-10 minutes.

Serve chicken, peppers, and toppings along with the lettuce and allow guests to build their own fajitas.
