Triple Berry

Crunch Jello

This festive side dish can be served with dinner or as a dessert.  The salty pretzel crust is the perfect contrast to the creamy filling and fruity topping.

Ingredients:

Directions:

Crust:

2 cups crushed pretzels

3/4 cup butter, melted

3 T. sugar

Filling:

1 package (8oz.) cream cheese

1 cup sugar

1 container (8oz.) frozen whipped topping (Cool Whip), thawed

Topping:

1 (6 oz) package raspberry gelatin

2 cups boiling water

20 oz. frozen fruit (recommended triple berry blend)

Crust:

Heat oven to 400 degrees F.

Stir pretzels, butter and sugar in a 13 X 9 inch baking dish until well combined.  Press onto the bottom of the pan.  Bake for 8 minutes.  Cool completely.

Topping:

Stir gelatin in boiling water until completely dissolved.  Add frozen fruit.  Stir and place in refrigerator while you prepare the filling.

Filling:

Mix cream cheese and  sugar together in a large mixing bowl.  Fold in thawed whipped topping.

Pour filling over cooled pretzel crust.  Spread gelatin mixture on top of filling.  (It may be "clumped" but will settle together in the refrigerator).  Chill several hours or overnight.
