Cranberry Extraordinaire

We found this recipe from Leeza on Allrecipes years ago.  This recipe includes our adaptations for this extra-special sauce that is well worth the effort.

Ingredients: 

1 cup water

​

1 cup sugar

​

1 (12 ounce) package fresh cranberries (washed/sorted)

​

1 orange, peeled and pureed

​

1 apple, peeled, cored and diced

​

1 pear, peeled, cored and diced

​

1 cup dried, mixed fruit (we prefer pitted prunes, apples, apricots, peaches, and pears)

​

1/2 t. salt

​

1 t. cinnamon

​

1/2 t. nutmeg

Directions:

In a medium saucepan, boil water and sugar until the sugar dissolves.  Reduce the heat to simmer and stir in cranberries, pureed orange, apple, pear, dried fruit, salt, cinnamon, and nutmeg.  Cover and simmer for 30 minutes, stirring occasionally, until the cranberries burst.  Remove from heat and let cool to room temperature.  Store in the refrigerator.​

Options: 

You can use this as a traditional side dish of cranberry sauce, or, spread it over a rectangle of cream cheese and serve it with crackers for a delicious appetizer or snack.
