Cucumber Mint Sandwiches

Cucumber sandwiches are are a common staple at afternoon tea. These sandwiches include mint for a twist on the classic sandwich.

Ingredients:

1 English (seedless) cucumber, peeled and sliced thinly

1 loaf sandwich bread (white or wheat)

1/4 cup (1/2 stick) butter, room temperature

2 oz. cream cheese, softened

2 T. sliced mint

kosher salt

Directions:

Mix mint and cream cheese together.

Spread butter onto bread slices. Spread cream cheese mixture on top of butter. Use circular cookie cutter about the size of the cucumber slices (approximately 2 inches) to cut circles out of bread. Place cucumber slices on top of bread rounds. Sprinkle salt on top of cucumbers.
