We've tried a lot of banana breads, but we keep coming back to this one, which is slightly modified from Flours. You can make one loaf with it, or 8 mini loaves. It makes an excellent snack or the perfect addition to a "grab and go" breakfast.
Total Prep Time: 20 minutes, plus baking
1 2/3 cup flour
1 t. baking soda
1 t. cinnamon
1/2 t. kosher salt
1 cup plus 2 T. sugar
1/2 cup coconut oil
3 1/2 bananas, mashed
2 T. sour cream
1 t. vanilla extract
Heat oven to 350 degrees F.
Combine flour, soda, cinnamon and salt in a small bowl. In another bowl, beat sugar and eggs until light and fluffy. Add oil. Then, mix in bananas, sour cream and vanilla. Fold in dry ingredients. Pour into greased pans and bake. For 1 loaf pan, bake for 45-1 hour. For mini loaf pans, Bake 20-25 minutes. Cool. Can be frozen.
