Goat Cheese and Cranberry Sweet Potato Rounds

We first tasted these delicious rounds at a cocktail party around the winter holidays.  While they definitely mimic the taste of fall, we find they work well year round.

Ingredients: 

1 large sweet potato, washed and sliced into rounds about 1/4 inch thick

1/4 cup olive oil 

​

kosher salt and pepper

​

1 (4 oz.) container goat cheese

​

1/3 cup dried cranberries

​

1/3 cup pecan pieces, toasted

​

honey

Directions:

Preheat oven to 400 degrees F.  Place potatoes on baking sheet.  Pour olive oil on potatoes and toss with hands until rounds are coated.  Sprinkle with salt and pepper.  Bake for about 30 minutes until rounds are tender, turning once.  Cool.

Place about 1 t. goat cheese on the center of each round and sprinkle cranberries and pecans on top.  Drizzle with honey.
