Coconut Rice

The key to coconut rice is to substitute half of the water with coconut milk.  It lends a slightly sweet hint of coconut which compliments a luau menu perfectly.

Ingredients: 

Directions:

3 cups Jasmine rice

1 can (13 oz.) coconut milk 

1 1/2 cups water

2 T.  sugar

1 T. salt

Combine ingredients in a saucepan.  Heat over medium heat until it boils.  Cover and reduce heat to a simmer.  Simmer for 15-20 minutes until liquid is absorbed, stirring occasionally.
