While macaroni salad is not native to Hawaii, it has been adopted and is often served there.
This delicious salad has very few, simple ingredients that combine to create an surprisingly delicious dish.
Total Time: 30 minutes
Serving size: 12 -15 (as a side dish)
1 (16 oz.) box of elbow macaroni
2 cups mayonnaise
1/4 cup finely grated onion (it will be watery--put the water in the salad as well)
1/4 cup finely grated carrot
1 t. salt
fresh ground pepper
Cook macaroni in boiling water until plump and soft (beyond al dente). Drain.
Combine mayo, onion, carrot, salt and pepper in a large bowl. Stir in cooked macaroni. Refrigerate. (Can be made a day in advance.)
