Raspberry Lime Rickey
Raspberry and lime combine with club soda to make a sweet-tart and totally refreshing drink.
Total Time: 20 minutes
12 oz. frozen raspberries
2 cups sugar
1/2 cup water
1 cup fresh lime juice
1-2 (33 oz.) bottles of club soda
Place raspberries, sugar and water in a saucepan over medium heat. Stir, breaking up berries as it heats. Cook until berries are broken up and sugar is dissolved. Remove from heat and allow to cool. Stir in lime juice and place in refrigerator. Can be stored in the refrigerator for a week.
When ready to serve, Add club soda to a pitcher and add in raspberry lime syrup to taste. (Recommended approximately 4 cups of syrup to 1 bottle of club soda-about 1 1/2 bottles of club soda for the batch of syrup). Garnish with lime wedges if desired.
