This salad has a little bit of everything--fresh fruit, bacon, and macadamia nuts topped with a pineapple dressing. Adding toasted coconut lends a tropical flare.
Total Time: 20 minutes
Serving size: 12 (as a side dish)
1-2 hearts of romaine lettuce
1/2-1 whole pineapple, cut into chunks
1 container fresh raspberries
2-3 oz. chopped roasted macadamia nuts
6-8 slices of bacon, cooked and crumbled
1/4 -1/2 cup toasted coconut
1/2 cup pineapple juice
1/2 lime, squeezed
1/4 cup olive oil
1/4 cup apple cider vinegar
1 clove garlic, minced
1 t. finely grated ginger
salt and pepper to taste
For salad, place desired amounts of ingredients in a large bowl. Toss with dressing.
Combine ingredients in a glass jar and shake to combine. Refrigerate until ready to serve with salad.
