Lime Mojito

 Only having a little of this mojito is impossible.  The combination of the lime and mint is addicting.  It may be non-alcoholic, but your guests will be thirsting for more.

Servings:  8 (6 oz.) glasses

Ingredients: 

Directions:

2 cups simple syrup (2 cups sugar, 2 cups water)

6-8 limes, quartered

 

1/2 cup washed mint leaves

 

1 liter club soda

 

ice

Prepare simple syrup ahead of time.  Put 2 cups of sugar and 2 cups of water in a saucepan over medium heat.  Bring to a boil and stir until the sugar is completely dissolved.  Pour into a glass container and refrigerate.

To prepare lime mojitos, place limes and mint in a pitcher. Take a wooden spoon or spatula and muddle the two (press on the limes to release their juices. Try not to tear the mint leaves, just press them.  Add cooled simple syrup to the pitcher and stir.  Add chilled club soda and stir.  Add ice.
